In mid-2016 he opened Bibo at Double Bay, a wine bar where his menu, with more than a touch of his Portuguese homeland, is as much a star as the fabulous wine list. Born in Portugal, Jose has strong ties to the flavours of his ancestral homeland. In 2013, he took a break from fine dining and bought iconic Petersham bakery, Sweet Belem, famed for its Portuguese tarts (which now appear on the Bibo menu). 

Together with industry young guns Jonathan Mallet, Louella Matthews and Ambroise Moriceau, he opened bibo wine bar in Double Bay in April 2016.
